How much does the setup differ by trade?
The departments, the starter procedures and the wording. That is it - the mechanism is identical, which is why a dealership and a clinic run the same release.
Can I run two businesses on one installation?
Not cleanly, no. One installation is one business - that is what keeps it simple and cheap. Two businesses means two installations, and we would price that as a conversation rather than pretend one licence stretches.
